Mediterranean Cod
Ingredients
Cod
1 pint cherry tomatoes
Handful of pitted olives, sliced
2 tbsp capers
3 cloves of garlic, minced
2 lemons
Salt and pepper
Directions
Preheat oven to 400°F.
Place cod on baking sheet with aluminum foil. Season with salt, drizzle with avocado oil, and place lemon slices on top. Tent foil on top of cod and cook in the oven for 10-12 minutes until cooked through.
Heat cherry tomatoes in skillet over medium heat with a drizzle of avocado oil. Cook about 10 minutes until tomatoes start to pop. Add olives, capers, garlic, and juice from 1/2 lemon. Continue cooking for about 5 minutes.
Top fish with sauce and serve with a starch and vegetable, such as potatoes and green beans. Enjoy!
