Crunchy Vegan Tacos
Ingredients
Crunchy taco shells
1 can black beans
2 cans pinto beans
1 onion, diced
6 garlic cloves, minced
1 packet taco seasoning
Optional toppings: lettuce, pico de gallo, guacamole
Directions
Sauté onion and garlic over medium heat until onion is softened, about 5 minutes.
Drain and rinse beans.
Add beans, onion, garlic, and taco seasoning to food processor. Blend until smooth.
Cook taco shells according to directions.
Add beans to taco shells and top lettuce, pico de gallo, and guacamole!
