Chickpea Sweet Potato Curry

 
 

Ingredients

  • 3 medium sweet potatoes, diced

  • 1/2 red onion, thinly sliced

  • 2 garlic cloves, minced

  • 2 tsp red curry paste (add more or less depending on how spicy you’d like)

  • 1 can chick peas

  • 1 can coconut milk

  • 2 cups spinach

  • 1 cup low sodium vegetable broth

  • 1 lime, juiced

  • Optional: peanuts, sriracha, cilantro for topping

Directions

  1. In a large pan or pot, sauté onion for 2-3 minutes over medium heat, then add garlic and cook until fragrant (about 30 seconds).

  2. Add sweet potato and cook for 4-5 minutes.

  3. Add red curry paste, broth, and chickpeas. Cook covered on low-medium heat until potatoes are soft, about 7-8 minutes.

  4. Add lime juice, coconut, and spinach. Once spinach is wilted it’s ready to serve.

  5. Serve with rice, crushed peanuts, sriracha, and cilantro. Enjoy!
