Chickpea Sweet Potato Curry
Ingredients
3 medium sweet potatoes, diced
1/2 red onion, thinly sliced
2 garlic cloves, minced
2 tsp red curry paste (add more or less depending on how spicy you’d like)
1 can chick peas
1 can coconut milk
2 cups spinach
1 cup low sodium vegetable broth
1 lime, juiced
Optional: peanuts, sriracha, cilantro for topping
Directions
In a large pan or pot, sauté onion for 2-3 minutes over medium heat, then add garlic and cook until fragrant (about 30 seconds).
Add sweet potato and cook for 4-5 minutes.
Add red curry paste, broth, and chickpeas. Cook covered on low-medium heat until potatoes are soft, about 7-8 minutes.
Add lime juice, coconut, and spinach. Once spinach is wilted it’s ready to serve.
Serve with rice, crushed peanuts, sriracha, and cilantro. Enjoy!
