Walnut & Date Energy Bites

 
 

Ingredients

  • 1.5 cups medjool dates without pit

  • 3/4 cup walnuts

  • 1/4 cup almond meal

  • 1/4 cup coconut flakes (unsweetened)

  • 1/2 tsp vanilla extract

Directions

  1. Soak dates in boiling water for about 5 minutes to soften.

  2. Add all ingredients into a food processor and blend well.

  3. Roll into 1 inch balls and store in the fridge for a quick snack!
