Walnut & Date Energy Bites
Ingredients
1.5 cups medjool dates without pit
3/4 cup walnuts
1/4 cup almond meal
1/4 cup coconut flakes (unsweetened)
1/2 tsp vanilla extract
Directions
Soak dates in boiling water for about 5 minutes to soften.
Add all ingredients into a food processor and blend well.
Roll into 1 inch balls and store in the fridge for a quick snack!
