Loaded Baked Potato

 
 

Ingredients

  • 1lb ground turkey

  • 1 packet taco seasoning

  • 3-4 russet potatoes

  • 1 green pepper, diced

  • 1 yellow onion, diced

  • Topping suggestions: shredded cheese, diced tomatoes, diced red onion, pickled jalapeños, sour cream or plain Greek yogurt

Directions

  1. Clean potatoes and rub them with avocado oil and salt. Bake in the oven at 400°F for 45-60 minutes until tender.

  2. Sauté green pepper and onion on medium heat with 1 tbsp avocado oil for 5-6 minutes until softened.

  3. Add ground turkey to pan with green pepper and onion, cooking for about 4-5 minutes.

  4. Add taco seasoning to pan with ground turkey and 2/3 cup of water. Simmer for 2-3 minutes.

  5. Top baked potatoes with ground turkey mixture and toppings of choice!

To make vegetarian, can use tofu or black beans instead of ground turkey.
