Chicken Salad

 

Chicken salad melt on whole wheat toast, topped with tomato and Swiss cheese.

 

Ingredients

  • 2 boneless, skinless chicken breast

  • 4 celery stalks, diced

  • 1/4 red onion, diced

  • 1/3 cup pecans, chopped

  • 1 cup grapes, sliced in half

  • 1/2 cup mayo

  • 1/2 cup plain Greek yogurt

  • 1/2 lemon, juiced

  • 1 tsp poppy seeds

  • 1/4 tsp salt

Directions

  1. Pound chicken breast until 1/2 inch thick, season with salt & pepper. Cook over medium heat on skillet for about 3 minutes each side. Then let cool and dice.

  2. Mix all ingredients and enjoy in a salad, as a sandwich, or a chicken salad melt on toast!
