Chicken Salad
Ingredients
2 boneless, skinless chicken breast
4 celery stalks, diced
1/4 red onion, diced
1/3 cup pecans, chopped
1 cup grapes, sliced in half
1/2 cup mayo
1/2 cup plain Greek yogurt
1/2 lemon, juiced
1 tsp poppy seeds
1/4 tsp salt
Directions
Pound chicken breast until 1/2 inch thick, season with salt & pepper. Cook over medium heat on skillet for about 3 minutes each side. Then let cool and dice.
Mix all ingredients and enjoy in a salad, as a sandwich, or a chicken salad melt on toast!
