Tortellini Pasta
Ingredients
1 package tortellini
1 pint cherry tomatoes, sliced in half
2 handfuls spinach, roughly chopped
4 garlic cloves, minced
Parmesan, shredded
Fresh basil
1 lemon, zest and juice
1/4 tsp dried oregano
Pinch of chili flakes (optional)
Salt and pepper
Directions
Bring a pot of water to boil.
Add cherry tomatoes, garlic, lemon zest, dried oregano, and chili flakes to pan with avocado oil. Sauté over medium heat for about 5-6 minutes until tomatoes soften.
Add tortellini to boiling water and cook according to package directions.
Add chopped spinach and juice from 1/2 the lemon to pan with cherry tomatoes and cook for 1-2 minutes until wilted.
Add cooked tortellini to pan with 1/4 cup pasta water.
Add shredded parmesan cheese and stir.
Season with salt and pepper to taste and top with fresh basil, enjoy!
