Tortellini Pasta

 
 

Ingredients

  • 1 package tortellini

  • 1 pint cherry tomatoes, sliced in half

  • 2 handfuls spinach, roughly chopped

  • 4 garlic cloves, minced

  • Parmesan, shredded

  • Fresh basil

  • 1 lemon, zest and juice

  • 1/4 tsp dried oregano

  • Pinch of chili flakes (optional)

  • Salt and pepper

Directions

  1. Bring a pot of water to boil.

  2. Add cherry tomatoes, garlic, lemon zest, dried oregano, and chili flakes to pan with avocado oil. Sauté over medium heat for about 5-6 minutes until tomatoes soften.

  3. Add tortellini to boiling water and cook according to package directions.

  4. Add chopped spinach and juice from 1/2 the lemon to pan with cherry tomatoes and cook for 1-2 minutes until wilted.

  5. Add cooked tortellini to pan with 1/4 cup pasta water.

  6. Add shredded parmesan cheese and stir.

  7. Season with salt and pepper to taste and top with fresh basil, enjoy!
